The following recipe is inspired by The Deep End, the first book in the Country Club Murders Series. This historical mystery series is set in the mid-1970's in Kansas City and features a socialite amateur sleuth (Ellison Russell) who solves mysteries amidst the country club set.

Recipe Note

In THE DEEP END by Julie Mulhern, Ellison Russell’s housekeeper Aggie makes chicken salad without grapes (which is Ellison’s preference). You can add grapes to the chicken salad if you’d like or eat it just like Ellison.

Chicken Salad Recipe

Ingredients

• 2 cups cooked white-meat chicken or turkey chopped

• 1/2 cup mayonnaise

• 1 stalk celery chopped

• 1 green onion (light green and white parts) diced

• 1 teaspoon Dijon mustard

• 1/2 teaspoon salt

• Pepper to taste

Directions

Combine all ingredients in a medium bowl and mix well. Serve on a croissant, bread, lettuce, or crackers. This chicken salad can be kept covered and refrigerated for up to one week.
